2 cans chickpeas , drained and rinsed ( check the ounces on the can )
2 eggs
2 tablespoons cajun seasoning
1/2 teaspoon salt

1/4 cup fresh breadcrumb
3 green onions , thinly sliced
2 garlic cloves , minced
3 tablespoons vegetable oil
3 large whole wheat pita breads
1 1/2 cups shredded carrots
1 1/2 cups thinly sliced cucumbers
1/2 cup plain yogurt
2 tablespoons chopped fresh cilantro or 2 tablespoons mint

Instructions

1.In a food processor, pulse the chickpeas until roughly chopped.
2.Add the eggs, cajun seasoning, salt, and pepper, and pulse until well combined.

4.Form the mixture into 12 patties, about 3 tablespoons each.
5.Heat the vegetable oil in a large skillet over medium heat.

7.In a small bowl, mix together the yogurt and cilantro (or mint).
8.To serve, cut the pita breads in half and stuff each half with shredded carrots, sliced cucumbers, and 2 patties.
