Ingredients

1 lb chickpeas ( dry )
2 medium onions , chopped
salt
pepper
parsley
dill
oregano
1 mashed tomatoes ( optional )
1/2 cup breadcrumbs , plus more if needed
flour , for binding the mixture and for coating
1/4 cup crumbled feta cheese or 1/4 cup any grated cheese
1 -2 egg
oil ( for frying )
Revithokeftedes, or crispy Chickpea balls, are a typical Greek appetizer or snack that you can find in tavernas and markets. They are usually served with Tzatziki sauce or a fresh lemon wedges on top. Chickpeas are a staple in Mediterranean cuisine, and this dish highlights them at their best. They are a healthy and delicious way to consume legumes and spices.

Instructions

1.Soak the chickpeas overnight and boil them in salted water until they are soft. Drain them and let them cool down a bit.
2.Add the onions, parsley, dill, oregano, salt, and pepper in a food processor or use a hand mixer to create a puree texture. Add this mixture to the chickpeas, together with the grated cheese and 1/2 cup breadcrumbs and mix well until everything is combined.
3.Divide the mixture into small balls and coat with flour. Add more breadcrumbs if the mixture is too thin.
4.In a pan, heat the oil and fry the chickpea balls until they turn to a golden brown color. Drain them on a paper towel and serve hot or cold.

PROS

These crispy balls are a great vegetarian snack or appetizer.
