1/4 cup flat leaf parsley , chopped
1 orange , flesh cut into 1cm cubes
salt and pepper
1 orange , zest of , to garnish ( use above orange )
1 tablespoon olive oil

Instructions

1.In a pot, sauté the onions and bay leaves in olive oil until onions are golden brown.

3.Bring the mixture to a boil and let it simmer for about 20 minutes.
4.Add chopped parsley and cubed oranges.
5.Salt and pepper to taste.
6.Garnish with orange zest before serving.
