Ingredients

4 -5 whole boneless skinless chicken breasts , split
1/2 cup Italian style breadcrumbs , and
1/2 cup parmesan cheese , mixed in a bowl
1 egg , beaten
6 -8 slices mozzarella cheese
1 can Italian-style tomatoes
1 can tomato sauce
1 medium onion , finely chopped
2 tablespoons olive oil
3 cloves garlic , chopped
1 teaspoon thyme
1 teaspoon basil or 3 -5 leaves fresh basil , chopped fine
1 teaspoon salt

Instructions

1.Preheat oven to 375 degrees F.
2.Dip each chicken breast in egg and then in breadcrumbs mixture, coating them completely.
3.In a pan, heat olive oil over medium heat. Add garlic and onion and cook for 2 minutes.
4.Add can of tomatoes with juices, thyme, basil and salt. Cook for 5 minutes and then add tomato sauce.
5.Pour 1/3 of tomato sauce in a baking dish. Add coated chicken breasts on top of the tomato sauce.
6.Pour remaining tomato sauce over the chicken, and place mozzarella cheese on top of chicken.
7.Cover tightly with foil and bake for 25-30 minutes. Remove foil and bake for another 10 minutes.
