Ingredients

6 Italian sausage ( hot or mild )
6 boneless skinless chicken breasts
1/3 cup unsalted butter
1/4 cup white wine
salt and pepper
2 tablespoons unsalted butter

2 red bell peppers , seeded , deveined and diced
2 cups tomato puree
1/2 cup fresh parsley , leaves chopped

Instructions

1.Preheat oven to 375°F.
2.2.In a large skillet, melt 1/3 cup unsalted butter over medium heat.
3.Add in white wine, salt, and pepper to taste.

5.Using a meat mallet, pound the chicken breasts to an even thickness.

9.Add in chicken broth and bring mixture to a boil. Reduce heat to low, cover and simmer for 18-20 minutes.
10.In a separate skillet, melt 2 tablespoons unsalted butter over medium-high heat. Add in onions, scallions, garlic, mushrooms, and bell peppers. Cook until vegetables are tender.
11.Add tomato puree and parsley to the skillet and cook for another 5 minutes.
12.Serve chicken-wrapped sausages over rice and top with mushroom-tomato sauce.
