Chicken wontons are a popular Chinese appetizer. These bite-sized dumplings are filled with ground chicken, onions, garlic, and ginger and then steamed until tender. They are usually served with a dipping sauce that complements the flavors of the wontons. For this recipe, we are using a sweet and tangy raspberry Szechuan sauce. The Szechuan sauce has a unique combination of spicy, sweet, and sour flavors that perfectly complement the chicken wontons. The sauce gets its name from the Sichuan pepper, which is traditionally used in Szechuan cuisine and has a distinct numbing sensation that lingers in the mouth.

Instructions

1.In a large mixing bowl, stir together the ground chicken, minced onions, crushed garlic, minced fresh ginger, and soy sauce.
2.Place a tablespoon of the chicken mixture in the center of each wonton wrapper. Wet the edges of the wrappers with water and fold them up around the filling, pressing the edges to seal them.
3.Heat a large pot of water to boiling. Add the wontons to the water and cook for about 10 minutes, or until they float to the surface.
4.While the wontons are cooking, prepare the raspberry Szechuan sauce by combining the raspberries, vinegar, sugar, hot chili sauce, grated fresh ginger, crushed garlic, lime juice, liquid honey, and salt in a small saucepan over medium-high heat. Cook for 5-7 minutes, stirring frequently, until the raspberries have broken down and the sauce has thickened.
5.In a small bowl, whisk together the cornstarch and water. Stir the cornstarch mixture into the raspberry sauce and continue cooking for an additional 1-2 minutes, or until the sauce has thickened to your desired consistency.
6.Serve the chicken wontons hot with the raspberry Szechuan sauce for dipping.
