Instructions

1.Preheat oven to 450°F.

4.Heat 2 tablespoons oil in each of 2 heavy large ovenproof skillets over medium-high heat.
5.Add 2 chicken breasts to each skillet and cook chicken until browned, about 4 minutes per side.
6.Transfer skillets to oven and bake chicken until cooked through, about 12 minutes.
7.Meanwhile, heat remaining 1 tablespoon oil in another heavy large skillet over medium-high heat.
8.Add lemon slices and sauté until browned in spots, about 2 minutes per side.
9.Add olives and capers and sauté 2 minutes longer.
10.Add stock and bring to boil, scraping up any browned bits.
11.Remove from heat; add butter and whisk just until melted.
12.Season sauce to taste with salt and pepper.
13.Transfer chicken to plates.
14.Spoon sauce, olives, and lemon slices over chicken.
15.Sprinkle with parsley and serve.
