4 cooked artichoke hearts , thickly sliced or 14 ounces artichoke hearts
1/4 cup fresh lemon juice
2 egg yolks
chopped fresh parsley , for garnish
chopped fresh oregano , for garnish
This chicken recipe is a delightful combination of savory and tart flavors. Instructions

1.Soak the dried wild mushrooms in hot water for at least 30 minutes, until softened, then drain and chop them coarsely.
2.Mix 3/4 cup flour with salt and dredge chicken in the mixture.
3.In a large pan over medium-high heat, cook the chicken in olive oil until golden brown on all sides, about 10 minutes.
4.Add sliced onion and sauté until softened.
5.Pour in the white wine and chicken stock. Add diced artichoke hearts and chopped mushrooms. Bring to a boil.
6.simmer for 20 minutes.
7.Mix egg yolks, lemon juice, and 2 tablespoons of flour. Whisk well to dissolve flour.
8.Reduce heat and pour egg mixture into the cooking liquid. Cook for 2-3 minutes until sauce thickens.
9.Garnish with fresh parsley and oregano. Serve hot.
