Ingredients

6 whole chicken legs
1 tablespoon salt
4 tablespoons olive oil , divided
12 baby carrots , peeled
1 cup shallot , peeled , halved
3 garlic cloves , peeled
1 teaspoon thyme , chopped
1/2 teaspoon lemon peel , grated
2 tablespoons spices
3 cups chicken broth
2/3 cup white wine
14 brown turkey figs , halved
2 teaspoons sherry wine vinegar
couscous ( prepared per package directions )

Instructions

1.Preheat oven to 350°F, and season the chicken with salt.
2.In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add chicken and cook for 8-10 minutes per side until browned.
3.Remove chicken from skillet and place in a large roasting pan.
4.To the same skillet, add 2 tablespoons of olive oil, carrots, shallot, garlic, thyme, lemon peel, and spices. Cook for 5 minutes until softened.

6.While the chicken roasts, prepare the couscous according to the package instructions.
7.Once the chicken is cooked, remove from the oven, and drizzle with sherry wine vinegar on top. Serve with the cooked couscous.
