Ingredients

4 small firm beurre bosc pears or 2 large firm beurre bosc pears , unpeeled , quartered and cored
40 g unsalted butter
4 tablespoons sunflower oil
500 g shallots or 500 g baby onions
1 onion , peeled and chopped
1 large chicken , jointed
sea salt , to taste
fresh ground black pepper , to taste
good pinch saffron thread
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 -2 tablespoon clear honey
100 g blanched almonds ( optional )

Instructions

1.Preheat the oven to 200°C/180°C fan/gas 6.
2.Put the pears in a shallow ovenproof dish, dot with 20g of the butter and pour over 2 tablespoons of the oil.
3.Add the shallots or baby onions and chopped onion to the dish.
4.Season the chicken well with salt and pepper, and arrange on top of the pears and onions in the dish.
5.Crush the saffron threads in a mortar and mix with the ginger, cinnamon, honey and remaining oil to form a paste.
6.Brush the chicken with the spice paste.
7.Roast in the preheated oven for 1 hour.
8.Toast the almonds in a dry frying pan over medium heat for 3-4 minutes.
9.Stir the remaining butter into the dish and sprinkle over the almonds.
10.Serve and enjoy!
