12 ounces St. Amand french country ale ( the remainder to be poured into the chef )
3 cups half-and-half

Instructions

1.In a heavy-bottomed pot, heat the vegetable oil and 1 tablespoon of butter over medium heat.
2.Season the chicken breast halves with salt and pepper, then add them to the pot.
3.Cook the chicken until browned on both sides then remove them from the pot and set aside.
4.In the same pot, add the remaining tablespoon of butter then sauté the shallots, mushrooms, leek, and garlic until tender.
5.Add the thyme, peppercorns, and french country ale. Let it simmer for 10 minutes until the liquid is reduced by half.
6.Add the celery and carrots to the pot and simmer for 10 minutes.
7.In a separate pot, heat the half-and-half over low heat, then add it to the pot.
8.Add the chicken back to the pot, cover the pot, and let it simmer for 5-7 minutes until the chicken is cooked through. Serve hot and enjoy!
