Ingredients

3 -4 boneless skinless chicken breasts
3 teaspoons vegetable oil
5 green onions
1 cup celery
1/2 cup chopped walnuts
2 lemons ( zest and juice )
4 teaspoons soy sauce
1 cup fresh mushrooms
1 cup fresh snow pea
1 cup white rice or 1 cup brown rice
Chicken Walnut Saute is a tasty stir fry dish that's perfect for a weeknight dinner. The dish features tender chicken, green onions, celery, walnuts, mushrooms, and snow peas all sautéed together in a skillet with soy sauce and lemon juice. Instructions

1.Cut the chicken into small bite-sized pieces.
2.In a large skillet, heat 1 teaspoon of the vegetable oil over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.
3.In the same skillet, heat the remaining 2 teaspoons of vegetable oil. Add the green onions, celery, and walnuts and cook for 2-3 minutes.
4.Add the lemon zest, lemon juice, and soy sauce to the skillet and stir well.
5.Add the mushrooms and snow peas to the skillet and cook for an additional 2-3 minutes, until the vegetables are tender.
6.Add the chicken back to the skillet and stir well.
7.Serve over cooked rice.
