Ingredients

6 boneless skinless chicken thighs
6 Toulouse sausages ( depending on the size of chook the thighs came from ) or 6 chipolata sausages ( depending on the size of chook the thighs came from )
250 g streaky bacon or 250 g pancetta ( 6 or 12 rashers depending on how cut )
200 g orange duck pate

Instructions

1.Preheat oven to 190C/375F/Gas Mark 5.
2.Lay a few pieces of clingfilm over the work surface and place the chicken thighs on top. Cover the chicken thighs with more clingfilm and use a meat mallet to pound them out to an even thickness.
3.Remove the clingfilm and skin from the sausages and place them along the centre of each chicken thigh.
4.Spread a generous layer of the orange duck pate over the sausages.
5.Roll the chicken thighs up to encase the sausages and pate, and then wrap with streaky bacon, ensuring that the seams are sealed.
6.Place the roulades seam side down onto a roasting tray and bake for 30-35 minutes or until the chicken is cooked through.
7.Cut the roulade into slices and serve alongside your choice of side dishes.
