Ingredients

2 chicken breasts
2 fresh red chili paste
1/2 cup low-fat plain yogurt

Instructions

1.Preheat oven to 180°C.
2.In a mixing bowl, combine chicken breasts, red chili paste, plain yogurt, garam masala, garlic paste, lemon juice, and salt. Mix well and marinate for 1 hour in the refrigerator
3.Spread the marinated chicken evenly onto an oven tray and bake for 20 minutes or until golden brown.
4.In a separate mixing bowl, add ½ tablespoon lime juice, spicy puffed rice, chat masala vinaigrette, and salt. Mix well and set aside.
5.In a salad bowl, add watercress, pine nuts, and the previously prepared mixture of puffed rice, lime juice, chat masala vinaigrette, and salt. Mix well.
6.Top the watercress salad with the baked chicken and serve chilled.
