Ingredients

1 tablespoon olive oil
6 slices streaky bacon , finely sliced
8 chicken thighs
2 tablespoons all-purpose flour
14 ounces shallots , peeled and halved
2 garlic cloves , finely sliced
9 ounces brown button mushrooms
1 1/4 cups white wine
4 sprigs thyme , leaves picked
2 ounces parsley , leaves only , chopped
3/4 cup heavy cream
Chicken, Thyme and Shallot Casserole is a classic comfort food dish perfect for chilly nights or times you need something warm and filling to feel cozy. Instructions

1.Preheat the oven to 325°F (160°C).
2.Heat the olive oil in a large flameproof casserole dish over medium heat. Fry the bacon for 5 minutes until golden, then remove from the dish and set aside.
3.Season the chicken thighs with salt and pepper, then toss with the flour in a bowl to evenly coat. In the same casserole dish, brown the chicken pieces skin-side down for 5 minutes until golden, then flip and brown the other side for an additional 5 minutes. Remove the chicken from the dish and set aside with the bacon.
4.Add the shallots, garlic, and mushrooms to the dish and cook for 5 minutes until softened. Pour in the white wine and scrape the bottom of the dish to release any browned bits. Add the thyme leaves and half of the chopped parsley. Return the chicken and bacon to the dish, and pour over any juices that have collected on the plate.
5.Bring the casserole to a simmer then cover and transfer to the oven. Cook for 1 hour and 15 minutes until the chicken is cooked through and tender.
6.Remove the casserole from the oven and stir in the heavy cream. Return the dish to the oven for an additional 10 minutes to heat through. Sprinkle with the remaining parsley and serve hot.
