Ingredients

1/2 fresh chicken ( chopped into small parts , OR 4-8 fresh chicken thighs )
2 tablespoons soy sauce
1 teaspoon dark soy sauce ( OR 1 more Tbsp . regular soy sauce )
2 tablespoons fish sauce
3 tablespoons sherry wine ( cooking sherry works well too )
2 tablespoons brown sugar
1 tablespoon black peppercorns ( crushed with pestle & mortar , , OR coursely ground with coffee grinder or pepper mill )
10 garlic cloves , minced
1/2 cup rice vinegar ( OR other type of vinegar ( white , white wine , or apple cider )
1/3 cup brown sugar , lightly packed
4 garlic cloves , minced
1 -2 1/3-1/2 teaspoon dried crushed chili or 1/3-1/2 teaspoon cayenne pepper
1 tablespoon fish sauce
1 tablespoon soy sauce
Thai BBQ Grilled Chicken is a classic Thai taste that pairs perfectly with the traditional Thai soup or sticky rice. This dish is made by marinating chicken with soy sauce, fish sauce, sherry wine, brown sugar, black peppercorns and garlic overnight, and grilling the chicken until it reaches a tender texture and smoky flavor. The dipping sauce made of vinegar, brown sugar, garlic, chili and fish sauce, enhance the flavor of chicken and add an extra dimension of heat and sourness. This dish is ideal for a summer cookout and can be served with grilled vegetables or a crispy green salad.

Instructions

1.In a bowl or large plastic bag, mix together the regular soy sauce, dark soy sauce, fish sauce, sherry wine, brown sugar, black peppercorns and minced garlic.
2.Add the chopped or whole chicken to the marinade, turning to coat well and refrigerate overnight.
3.To make the dipping sauce, mix rice vinegar, brown sugar, minced garlic, dried crushed chili or cayenne pepper, fish sauce and soy sauce in a saucepan. Bring the mixture to boil and simmer for a few minutes. Let cool.
4.Preheat the grill or oven to 375 F. Grill the chicken for about 20 minutes while flipping every five minutes or until the internal temperature reaches 165 F.
5.Serve the chicken hot with the dipping sauce and enjoy!
