Ingredients

1 1/2 lbs chicken tenders
1 tablespoon olive oil
1 tablespoon butter
1/2 teaspoon salt
1/4 teaspoon black pepper

2 ounces prosciutto , chopped
1 bag frozen peas , thawed
3/4 cup heavy cream
2 teaspoons chopped fresh sage
1 box spaghetti

1/2 cup freshly grated parmesan cheese
2 tablespoons chopped fresh Italian parsley
6 Italian plum tomatoes
1/4 teaspoon salt
1/4 teaspoon black pepper
This meal is perfect for those busy weeknights when you need something hearty and satisfying but don't have a lot of time to prepare. The chicken tenders are tender and juicy, while the creamy tomato sauce is the perfect complement to the whole wheat spaghetti. Instructions

1.Preheat the oven to 425°F.
2.Cut the tomatoes in half and place them in a baking dish, then drizzle with olive oil, salt and pepper. Roast in the oven for 30 minutes.
3.Heat the olive oil and butter in a large skillet over medium-high heat. Season the chicken tenders with salt and pepper, then brown them on both sides until cooked through.
4.Remove the chicken tenders from the skillet and set aside. In the same skillet, sauté the onions and prosciutto until the onion is translucent. Add the peas and continue to sauté for another 2-3 minutes until the peas are warmed through.
5.Add the heavy cream and chopped sage to the skillet and stir to mix everything together.
6.Cook the spaghetti according to package instructions, then add it to the skillet. Add the black pepper, grated Parmesan cheese, and chopped parsley to the skillet and stir everything together.
7.Serve the chicken tenders over the spaghetti and tomato sauce, garnishing with additional parsley or Parmesan cheese as desired.
