Ingredients

2 lbs potatoes
1 tablespoon oil
1 ounce butter
1 shallot , finely chopped
1 lb boneless skinless chicken breast , cut into 1/2 inch strips
1 tablespoon chopped fresh tarragon
7 ounces cream
6 ounces gruyere cheese , grated

Instructions

1.Preheat the oven to 350°F (180°C).
2.Peel and slice the potatoes into thin rounds and set aside.

4.Add chicken strips to the pan and cook until golden brown on both sides.

7.Cover the dish with foil and bake for 30 minutes. Remove the foil and bake an additional 30 minutes or until the potatoes are cooked through and the cheese is melted and golden brown.
