Ingredients

4 boneless chicken breasts
250 ml plain yogurt
30 g tandoori paste
1 pinch salt and pepper , to taste
1 tablespoon olive oil ( for cooking )
300 g eggplants or 300 g aubergines
1 large white onion
1 bunch flat leaf parsley
30 g tahini paste
200 ml plain yogurt
200 ml sour cream
30 g tahini paste

4 pieces flour tortillas or 4 pieces gluten-free tortillas
2 pieces tomatoes , ripe
1 white onion , bulb
1 cucumber
100 g romaine lettuce
This is a Middle Eastern-inspired wrap that's perfect for lunch or light dinner. Chicken Tandoori is marinated in yogurt and tandoori paste, cooked until tender and juicy, and then wrapped in a flour tortilla with a smoky eggplant salad. The eggplant salad is made with smoked or roasted eggplant, tahini, garlic, yogurt, and parsley, making it a delicious and nutritious companion to the chicken. Overall, this wrap is packed with a mix of flavors and textures that create a unique, filling, and tasty meal. Any leftovers can be stored in an airtight container in the fridge and reheated when needed.

Instructions

1.Slice the chicken breasts into thin strips, and place them in a large resealable plastic bag.
2.In a small bowl, mix together the plain yogurt, tandoori paste, salt, and black pepper. Pour the mixture into the bag with the chicken strips, seal the bag, and toss to coat the chicken in the marinade.
3.Heat olive oil in a large skillet over medium-high heat. Add the marinated chicken strips and cook for 7-8 minutes until chicken is cooked through.
4.Cut the eggplants, white onion, and tomato into small cubes. Finely chop the parsley and cut cucumber into thin slices. Mix together eggplants, onion, parsley, tahini paste, sour cream, yogurt, minced garlic, salt, and black pepper in a mixing bowl.
5.Warm the tortillas in the microwave or in a skillet. Then, assemble the wraps by placing a generous spoonful of the moutabelle dressing on top of each tortilla and topping with slices of chicken, tomatoes, sliced onion, sliced cucumber and romaine lettuce.
6.Roll the tortillas tightly into a wrap shape and serve immediately.
