Ingredients

1 1/2 teaspoons harissa
8 chicken thighs , skin removed
2 tablespoons olive oil
2 onions , chopped
2 carrots , sliced into coins
2 cloves garlic , minced
2 teaspoons grated ginger
6 ounces button mushrooms , halved
8 large dried figs , coarsely chopped
2 tablespoons all-purpose flour
1 3/4 cups chicken stock
2 tablespoons tomato paste
1 tablespoon lemon juice
3/4 cup pitted black olives
1/3 cup shelled pistachio nuts or 1/3 cup pine nuts
2 -3 tablespoons chopped fresh parsley ( to garnish )
Chicken Tagine with Figs, Olives, and Pistachios is a Moroccan-style dish that combines the flavors of sweet and savory in perfect harmony. Instructions

1.Preheat the oven to 350°F (175°C).
2.In a bowl, mix together olive oil, coriander, cumin, cinnamon, turmeric, lemon zest, lemon juice, and harissa to create a marinade.
3.Add chicken to the marinade and stir until well coated.
4.In a dutch oven or tagine, heat olive oil over medium heat. Add onions and carrots and cook until softened for about 5 minutes. Add garlic and ginger and stir until fragrant.
5.Add the chicken, including the marinade and cook for about 10 minutes, until browned.
6.Stir in the mushrooms, figs, flour, chicken stock, tomato paste, and lemon juice.
7.Bring to a simmer and cover the pot. Bake in the oven for 1 hour, then uncover and bake for an additional 20-30 minutes until the chicken is cooked through.
8.Add the olives and pistachio nuts. Garnish with chopped parsley before serving.
