Ingredients

3 -4 lbs whole chickens , backbone removed and flattened ( I also cut out some breastbones )
1 cup olive oil
6 garlic cloves , smashed
2 tablespoons seasoning ( paprika , carrot , garlic , turmeric , chili peppers , onion )
1 lemon
kosher salt & freshly ground black pepper

Instructions

1.In a bowl, mix olive oil, garlic, seasoning, juice of half the lemon, salt and pepper.
2.Coat chicken in mixture and let marinate for at least 2 hours.
3.Preheat oven to 475°F.
4.Place chicken on a baking sheet and top with another baking sheet weighed down with a brick or other heavy object.
5.Bake for 30-35 minutes until chicken is cooked through.
6.Serve with lemon wedges.
