Ingredients

1 broiler-fryer chickens
12 small whole shallots ( can substitute 2 sliced large onions )
2 1/2 lbs russet potatoes
2 tablespoons unsalted butter
2 cups chicken stock , made from the boiled giblets
salt and pepper , to taste
3 tablespoons chopped parsley ( to garnish ) ( optional )
Chicken stovies is a traditional Scottish dish that's perfect for cold and rainy days. This warm, comforting meal is made with tender chicken and starchy potatoes that are slow cooked together until they're soft and flavorful. Although it's not the most elegant of dishes, chicken stovies is a favorite among Scots because it's hearty and satisfying. It's a perfect meal for busy weeknights, and leftovers make for a great lunch the next day. Instructions

1.Preheat oven to 350°F.
2.Peel and slice the potatoes into thin rounds, and thinly slice the shallots or onions.
3.Melt the butter in a large pot over medium heat.
4.Add the potatoes and onions/shallots to the pot, and stir until coated in butter.
5.Season with salt and pepper to taste.
6.Remove the giblets from the chicken and make a chicken stock with them.
7.Add the chicken stock to the pot and stir gently.
8.Remove the chicken skin and place the chicken on top of the potatoes and onions in the pot.
9.Cover the pot and bake for 2 hours.
10.After 2 hours, remove the chicken and set it aside.
11.Use a spoon to gently mash the softened potatoes and onions in the pot.
12.Serve the chicken and mashed potatoes together, garnished with chopped parsley if desired.
