Ingredients

1 chicken carcasses ( such as neck , wings and back ) or 1 a variety of boney chicken piece ( such as neck , wings and back )
2 quarts water
1 onion , peeled
2 cloves
2 2 celery ribs , sliced in 2 ( parsley , thyme and a bay leaf ) or 1 bouquet garni ( parsley , thyme and a bay leaf )
2 garlic cloves , peeled
1/2 teaspoon salt
1/2 teaspoon peppercorn

Instructions

1.Place the chicken carcass or pieces, water, onion, cloves, celery, garlic, salt, and peppercorn into a large pot.
