Ingredients

1 lb chicken breast , thin sliced
1 can black beans , rinsed and drained
6 ounces roasted red peppers
1 1/2 cups roasted corn about 3 ears of corn ( now it does n't take long to roast in the oven and to me it really makes the dish , but if you want yo )
3 tablespoons green chilies ( you can more or less depending of hot much heat you want )
1 small onion , cut in half and thin sliced
1 envelope taco seasoning mix
1/4 cup water
1 teaspoon olive oil to saute the chicken
tortilla
olive oil , to brush on the tortilla for grilling

Instructions

1.Heat the oven to 450°F. Place the corn ears on a baking sheet lined with aluminum foil. Cook for 15 minutes, turn one-quarter turn, cook and turn every 10-15 minutes until browned and almost black. Remove the ears from the oven and let them cool.
2.Heat 1 teaspoon of olive oil in the skillet over medium heat. Add sliced onions and cook until soft and translucent for 5-7 minutes. Stirring occasionally.
3.Add the chicken to the skillet, cook for 10-12 minutes until browned.
4.Prepare the taco seasoning mix by dividing the package into three equal parts. Use one-third to sprinkle over the chicken.
5.Add black beans, roasted red peppers, roasted corn, and green chilies to the skillet. Stir well.
6.Add 1/4 cup of water to the skillet. Cook and stir until the liquid is evaporated and ingredients are heated through.
7.On a grill pan, place a tortilla brushed with olive oil on medium heat until crispy.
8.Serve the chicken stir fry on a tortilla and enjoy!
