Ingredients

6 chicken breasts
2 cups water or 2 cups chicken stock , to cover
6 large portabella mushrooms
1 red onion
1 teaspoon marjoram
1 teaspoon cumin
1/2 cup raisins
1/2 cup chopped black olives
4 hard-boiled eggs
1 tablespoon cornflour
salt and pepper
500 g frozen spinach
3 cloves garlic
2 tablespoons toasted chopped cashews
250 g instant polenta cornmeal
1/2 cup grated tasty cheese
1 1/2 liters water or 1 1/2 liters stock
1 teaspoon salt
This Chicken Spinach Polenta Layer Pie is a hearty and delicious dish that is perfect for a family dinner. Instructions

1.Preheat the oven to 375 F.
2.Cook the chicken breasts in water or chicken stock, seasoned with salt and pepper. Once cooked, remove from the liquid and set aside to cool. Reserve the cooking liquid for later use.
3.Slice the portabella mushrooms and red onion. Saute them in some olive oil until golden brown. Add marjoram and cumin. Stir to combine.
4.Roughly chop the raisins, black olives, and hard-boiled eggs. Add them to the mushroom and onion mixture. Sprinkle in some cornflour and mix everything together.
5.Defrost the frozen spinach in the microwave and drain any excess liquid. Mix in some crushed garlic and chopped cashews.
6.Prepare the polenta by boiling 1.5 liters of water or chicken stock. Add in the instant polenta cornmeal and stir until thickened. Mix in some salt and grated cheese.
7.Grease a baking dish with some butter or oil. Start layering the pie by adding spinach at the bottom, followed by a layer of chicken. Cover the chicken with mushroom mixture, and then top with more spinach and polenta.
8.Repeat the layering until all ingredients are used up. Finish with a generous layer of polenta on top.
9.Bake the pie for 60 minutes in the oven. Let it cool for 10 minutes before serving.
