Instructions

1.Preheat oven to 190°C/375°F.
2.In a large skillet, heat the olive oil over medium-high heat. Add the sliced onions and garlic, and cook until the onions are golden brown.
3.Add the chicken breasts to the skillet, and cook until golden brown on the outside. Add salt and pepper to taste.
4.After the chicken is cooked through, remove it from the skillet, shred it, and set it aside.
5.Add the fresh spinach to the skillet with the onion and garlic, and cook until wilted. Season with salt and pepper to taste.
6.In a separate bowl, mix together the crumbled feta, grated nutmeg, and beaten eggs. Add the shredded chicken to the mixture, and stir to combine.
