Ingredients

2 cups water
1 teaspoon salt
1 pound chicken legs
1 ounce dried shiitake mushrooms
8 ounces bean thread noodles ( cellophane noodles )
3 tablespoons olive oil
1 onion , chopped
2 cloves garlic , minced
1 1/2 teaspoons achiote powder
1 tablespoon fish sauce
salt and pepper to taste
2 cans chicken broth
2 green onions , chopped
Chicken Sotanghon is a Filipino soup dish that is commonly served on special occasions, as well as for everyday meals. Its main ingredients are bean thread noodles, chicken, and dried shiitake mushrooms. Achiote powder and fish sauce are used to add flavor to the dish, resulting in a savory and mildly spicy soup. Instructions

1.In a pot, bring 2 cups of water to a boil and add 1 teaspoon of salt. Add in the chicken legs and dried shiitake mushrooms, then lower the heat and let it simmer for around 20 minutes or until the chicken is cooked.
2.Remove the chicken from the pot and set it aside to cool. Shred the chicken meat when cooled.
3.Soak the bean thread noodles in warm water for 10 minutes then drain the excess water.
4.In a pan, sauté onions and garlic in olive oil for 2 to 3 minutes until onions turn soft.
5.Add achiote powder, fish sauce, salt and pepper and simmer for another 2 to 3 minutes.
6.Add the chicken broth and bring it to a boil. Once it boils, add the soaked bean thread noodles and chicken and mix everything well. Let it simmer for 5 minutes, then top with chopped green onion and serve hot.
