Ingredients

6 chicken cutlets , pounded thin
salt

6 sage leaves
3 ounces grated Fontina cheese
3 tablespoons olive oil
1 garlic clove , halved
1/2 cup white wine
1 can whole tomatoes
1/2 teaspoon red pepper flakes
1 teaspoon salt
1/2 teaspoon fresh ground pepper
6 -12 toothpicks
Chicken Scaloppine With Sage and Fontina Cheese is an Italian-inspired dish that combines tender chicken cutlets with the bold flavors of sage and melty Fontina cheese. Instructions

1.Preheat oven to 375 degrees F.
2.Season chicken cutlets with salt and pepper on both sides. Put 1 sage leaf and 1 teaspoon of Fontina cheese on half of each cutlet. Fold the other half over the filling and secure the edges with toothpicks.
3.In a large skillet, heat oil and garlic over medium heat. Remove garlic after a few minutes. Add chicken and cook until golden brown on both sides, about 3 minutes per side. Transfer chicken to a baking dish.
4.Add wine to the skillet and cook for 1 minute, scraping up brown bits from bottom of pan. Add tomatoes, red pepper flakes, salt and pepper. Bring to a boil, then reduce heat and simmer for about 10 minutes, stirring occasionally.
5.Pour sauce over chicken and bake in the oven for 10-15 minutes, until no longer pink in the center and cheese is melted.
6.Serve hot and enjoy!
