Ingredients

2 boneless skinless chicken breasts ( pounded to 1/3 inch )
1 tablespoon Dijon mustard
1 egg
3/4 cup fresh breadcrumbs or 3/4 cup panko breadcrumbs
1 pinch rosemary
1 pinch thyme

fresh ground black pepper or lemon pepper

6 tablespoons limoncello

3 teaspoons capers
4 -5 lemon slices

Instructions

1.Preheat your oven to 400°F.
2.Flatten the chicken breasts to ⅓ inch thickness.
3.In a bowl, beat the egg and add dijon mustard and garlic powder. Mix well.
4.In another bowl, mix breadcrumbs, rosemary, thyme, marjoram, and sage.
5.Coat the chicken breasts in the egg mixture, then the breadcrumb mixture.
6.In a pan, heat the butter and oil over medium heat. Fry the chicken until golden brown on both sides, then take out and place in an ovenproof dish.
7.In the same frying pan, pour the chicken broth, limoncello, and lemon juice. Heat until boiling, then reduce heat to low and simmer until the sauce reduces to about ¾ cup.
8.Add capers and lemon slices, cook until the sauce thickens.
9.Pour the sauce over the chicken and bake for 6-8 minutes to cook down the sauce.
10.Garnish with chopped parsley, and serve hot.
