1 chicken bouillon cube
1 cup boiling water

1/2 cup chopped green pepper
2 tablespoons butter , melted
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon black pepper
1 can sliced mushrooms , drained
1 jar diced pimentos , drained

Instructions

1.Cook egg noodles according to package instructions; drain.
2.In bowl, mix cottage cheese, sour cream, green onion, melted butter, pepper and garlic.
3.In another bowl, combine eggs and bread crumbs.
4.Dip chicken in egg mixture then coat with bread crumbs.
5.Melt butter in a greased baking dish.
6.Arrange chicken in dish and bake at 350°F for 45 minutes.
7.Dissolve bouillon cube in hot water.
8.In a pan, saute onion, green pepper and mushrooms in melted butter.
9.Add flour, salt and black pepper then stir until smooth.
10.Gradually add bouillon and continue to stir until thickened.
11.Pour sauce over chicken and top with Monterey Jack cheese slices.
12.Bake for another 5-10 minutes until cheese is melted and bubbly.
