Ingredients

500 g chicken thighs
2 Chinese sausage , lap cheong
4 shiitake mushrooms
2 tablespoons oil
1 shallot
1 tablespoon sesame oil
4 cm gingerroot , shredded
2 tablespoons dark soy sauce
1/2 teaspoon pepper , white
1/4 teaspoon Chinese five spice powder
450 g rice
Chicken & Rice Hot Pot, or Sha Bao Fan in Chinese, is a popular one-pot meal in China that originated in the Zhejiang province. The dish is made with chicken, Chinese sausage, shiitake mushrooms, and rice cooked together in a clay pot, resulting in a rich and flavorful combination. It is a comfort food that is enjoyed year-round, but especially during the cold winter months.

Instructions

1.Cut the chicken thighs in 2 cm cubes and slice the Chinese sausage thinly.
2.Soak the shiitake mushrooms in water until soft, then squeeze dry and slice.
3.Heat the oil in a clay pot, add the shallot and stir for 30 seconds.
4.Add the chicken meat and stir-fry for 1 minute or until slightly browned.
5.Add the lap cheong, ginger, and sesame oil and stir-fry for another 30 seconds.
6.Add the shiitake mushrooms, soy sauce, white pepper, Chinese five spice powder, and 2 cups of water.
7.Bring to a boil, then reduce heat and simmer for 15 minutes.
8.Pour in the rice and gently stir.
9.Cover the pot with the lid and cook for 30 minutes over low heat until the rice and chicken are cooked.
10.Turn off the heat and let the hot pot rest for 10 minutes before serving.

PROS

This traditional Chinese dish is easy to make and is a complete one-pot meal.
