Ingredients

8 ounces fresh tomatillos or 8 ounces cherry tomatoes , husked and rinsed
2 fresh serrano chilies
1/2 small white onion , chopped
3 tablespoons fresh cilantro leaves
1 lime , juice of
1 pinch salt
4 flour tortillas
3 1/2 shredded cooked chicken , seasoned to taste
2 1/2 cups of shredded cheddar cheese
1 tablespoon canola oil , for oiling pan
1 tablespoon sour cream ( optional )
1 tablespoon guacamole ( optional )

Instructions

1.Preheat the oven to broil.
2.Place the tomatillos and serrano chilies on a baking sheet and broil until they are slightly charred.
3.Remove them from the oven and let them cool for 5 minutes.
4.In a blender or food processor, blend the tomatillos, serrano chilies, white onion, cilantro leaves, lime juice, and a pinch of salt until smooth.
5.Spread the shredded chicken and shredded cheddar cheese over two tortillas each.
6.Place the remaining two tortillas on top to make four total quesadillas.
7.Place a non-stick skillet on medium heat and lightly oil the skillet with canola oil.
8.Cook each quesadilla for two to three minutes on each side until they are golden brown and the cheese inside has melted.
9.Cut into wedges and serve hot with roasted tomatillo salsa, sour cream, and guacamole (optional).
