Ingredients

7 ounces chipotle chiles in adobo
3/4 cup Mexican crema or 3/4 cup sour cream
kosher salt

4 cups shredded cooked chicken
1 cup grated monterey jack cheese
1 cup grated mexican cheese ( such as queso quesadilla , Chihuahua cheese or Oaxaca cheese )
1/2 cup crumbled Cotija cheese or 1/2 cup queso Anejo cheese
pico de gallo ( recipe below )
salt & freshly ground black pepper
1/4 cup coarsely chopped white onion
1/4 cup coarsely chopped fresh cilantro
3 fresh serrano chilies or 3 jalapeno chiles , seeded and coarsely chopped
1 1/2 medium tomatoes , finely chopped
kosher salt & freshly ground black pepper
12 flour tortillas
2 2/3 cups thinly sliced romaine lettuce

Instructions

4.Add a pinch of salt and pepper.

6.Season with salt and pepper.
7.Heat a large nonstick skillet over medium-high heat.
8.Place a tortilla in the skillet and cook for 1 minute, or until lightly browned.
9.Flip the tortilla over and top with 1/4 cup of the chicken and cheese mixture.
10.Add another tortilla on top and press down gently.
11.Cook for 1-2 minutes, or until golden brown.
12.Flip the quesadilla over and cook for an additional minute, or until both sides are golden brown.
13.Repeat with remaining tortillas.
14.Cut quesadillas into wedges.
15.Serve with pico de gallo and chipotle crema.
