Chicken Puffy Tacos are a popular Mexican dish that has a unique twist to the traditional tacos. These tacos are made with soft flour tortillas that turn into a crunchy shell when fried. The shredded chicken is cooked with onions, garlic, green chilies, and a blend of spices, then nestled inside the crispy taco shell. The dish can be customized easily with different toppings that can be added according to the taste, making it a perfect crowd-pleaser dish for lunch, dinner, or parties.

Instructions

.Place the chicken, onion, garlic, green chilies, chicken stock, smoked paprika, cumin, chili powder, Mexican oregano, salt, pepper, and cayenne pepper (optional) in a slow cooker.
.Cook on high for 4-5 hours or until the chicken is cooked through and tender.
.Once the chicken is done, remove it from the slow cooker and let it cool slightly.
.Shred the chicken using two forks or your fingers.
.Preheat 1 inch of vegetable oil in a large skillet over medium-high heat.
.Gently fold each tortilla in half to create a taco shape. Then, carefully place the tortilla in the hot oil, holding it open with tongs so it forms a basket as it fries. Fry the tortilla for about 30-45 seconds on each side or until it turns golden and crispy.
.Remove the tortilla from the skillet and drain it on a paper towel-lined plate.
.Fill each taco shell with a generous amount of the shredded chicken. Serve with your favorite toppings like lettuce, tomatoes, cheese, and salsa.
