Instructions

.Preheat your oven to 400°F. Cook the lasagna noodles according to the package directions in a large pot of boiling salted water.
.In a large pan, cook the chicken over medium heat until browned. Add in the mushrooms, carrots, and spring onions and cook until the vegetables soften, about 5-6 minutes.
.Once the vegetables are soft, add in the peas, thyme, and salt.
.In a separate pan, whisk together the flour and milk until smooth. Bring to a boil and cook until thickened, stirring constantly, about 2-3 minutes.
.Stir in the sherry and red pepper and cook for an additional minute.
.In a bowl, mix together the ricotta, 1 cup of the mozzarella, and the swiss cheese.
.To assemble, spread 1/2 cup of the sauce on the bottom of a 9x13 inch baking dish. Layer 4 lasagna noodles on top of the sauce. Top with a layer of half of the chicken and vegetable mixture, followed by a layer of half of the cheese mixture and 1 cup of the sauce. Repeat the layers, ending with a layer of lasagna noodles topped with the remaining sauce and 1/2 cup of mozzarella.
.Cover with foil and bake for 20-25 minutes. Remove the foil and bake for an additional 10 minutes or until the top is golden brown.
.Let the lasagna sit for 10 minutes before serving, garnish with fresh herbs if desired.
