Ingredients

1 lb pork loin , cubed ( I used thin-sliced boneless pork chops and it was fine )
1 onion , chopped
2 -3 tablespoons water
3 minced garlic cloves
2 teaspoons cumin
2 teaspoons paprika
1 1/4 lbs potatoes , peeled and thickly sliced
2 1/2 cups vegetable stock or 2 1/2 cups chicken stock
salt
pepper
2 eggs ( hard-boiled and sliced )
black olives , chopped
parsley
