1 prepared pizza crust ( I use a large Boboli )
1 chicken breast
2 limes
1 cup white wine
1/2 teaspoon cracked black pepper
3 cloves garlic , minced
4 tablespoons olive oil , separated
1 1/2 cups fresh baby spinach leaves , julienned wide
1/2 cup fresh basil , julienned wide
3 red potatoes , cooked and sliced thin
1/2 cup mozzarella cheese , grated
1/2 cup gorgonzola , grated
Chicken Pizza Florentine is a twist on the classic Italian pizza recipe, inspired by the vibrant flavors of the city of Florence. Instructions

1.Preheat the oven to 425°F.
2.Cook the chicken breast in a skillet over medium-high heat with 2 tablespoons of olive oil until golden brown, then remove and set aside.
3.In the same skillet, add the garlic, white wine, and juice of 1 lime and stir for a few minutes until the liquid has reduced and thickened.
4.Spread 2 tablespoons of olive oil over the pizza crust and sprinkle with black pepper.
5.Arrange the cooked chicken, sliced red potatoes, and julienned spinach and basil leaves over the crust, leaving a bit of space at the edges.
6.Squeeze the juice of the remaining lime over the toppings and sprinkle with grated mozzarella and gorgonzola cheese.
7.Bake the pizza for 12-15 minutes, or until the crust is golden brown and crispy.
