Ingredients

1 tablespoon butter
3 shallots , finely chopped
1 roasted red pepper , chopped ( I used bottled )
1 teaspoon fresh ginger , finely minced
1 teaspoon dried basil
1 medium portabella mushroom , finely chopped
salt and pepper
1/2 lb ground chicken
2 tablespoons fine dry breadcrumbs
1/2 lemon , zest of
1/2 lemon , juice of
1 egg , lightly beaten
3 tablespoons fresh parsley , chopped
8 sheets phyllo pastry
1/4 cup butter , melted
1/2 - 3/4 cup shredded cheese , your choice ( I used garlic havarti )

Instructions

1.Preheat oven to 375°F.
2.Melt butter in a skillet over medium-high heat.
3.Add shallots, roasted red pepper, ginger, basil, mushroom, salt and pepper, and cook until shallots are translucent and mushrooms are softened.
4.Add ground chicken, breadcrumbs, lemon zest and juice, and cook until chicken is no longer pink.
5.Remove mixture from heat and stir in beaten egg and parsley.
6.Layer 2 sheets of phyllo pastry on top of each other and brush with melted butter.
7.Cut into 8 squares.
8.Spoon chicken mixture onto each square, and fold into mini tarts.
9.Place on a baking sheet and brush with melted butter.
10.Bake for 12-15 minutes or until phyllo pastry is golden brown.
