Ingredients

2 large whole boneless skinless chicken breasts
1 package chicken Shake-n-Bake
extra virgin olive oil , to cover skillet
1/2 cup freshly grated parmigiano-reggiano cheese
1/3 cup minced flat leaf parsley ( for garnish ) ( optional )
2 cans hunts chunky crushed tomatoes
2 cans hunts tomato paste
1 can stewed tomatoes ( Italian )
1/4 cup extra virgin olive oil
6 chopped garlic cloves ( cut in halves or thirds )
1 teaspoon garlic juice ( from jar )
1 shallot ( diced )
2 tablespoons dried oregano
4 tablespoons dried Italian seasoning
1 teaspoon dried basil
1 tablespoon Splenda granular ( sugar substitute )
1/2 teaspoon salt
1/2 teaspoon black pepper
Chicken Parmigiano, also known as chicken Parmesan, is a classic Italian-American dish that has become a staple in households all over the world. Instructions

1.Preheat oven to 375°F (190°C).
2.Cut the chicken breasts in half crosswise.
3.Coat each chicken piece in Shake-n-Bake mix.
4.Heat olive oil in a skillet over medium heat.
5.Add chicken pieces and cook for 3 minutes on each side or until golden brown.
6.Transfer the chicken to a baking dish.
7.Combine the crushed tomatoes, tomato paste, stewed tomatoes, olive oil, chopped garlic, garlic juice, shallot, oregano, Italian seasoning, basil, Splenda, salt, and black pepper in a separate bowl.
8.Pour the mixture over the chicken and sprinkle with Parmigiano cheese.
9.Bake in the preheated oven for 35 minutes or until the cheese is melted and bubbly.
