Ingredients

4 boneless skinless chicken breasts
1 cup flour
3 eggs
1 1/2 cups Italian seasoned breadcrumbs ( panko works well too )
1 cup chunky marinara sauce
4 slices provolone cheese
oil ( for frying )
4 medium sized kaiser rolls

Instructions

1.In a shallow dish, place flour. In a separate shallow dish, beat eggs well. In a third shallow dish, place breadcrumbs.
2.Take a chicken breast and pound it down until it is about 1/2 inch thickness.
3.Dredge the chicken breast in the flour, then the eggs, then the breadcrumbs. Repeat with remaining chicken breasts.
4.In a large skillet, heat oil over medium-high heat. Once hot, add chicken breasts and fry for 4-6 minutes on each side or until golden brown and cooked through.
5.Preheat broiler.
6.Open the kaiser rolls and place them on a baking sheet. Place a chicken breast on each of the bottom halves of the rolls. Spoon a couple of tablespoons of marinara sauce over each chicken breast. Place a slice of provolone cheese over the sauce. Place the top of the roll on top of the cheese.
7.Broil for 1-2 minutes or until cheese is melted and bubbly.
