Instructions

1.Preheat your oven to 375 degrees F.
2.In a mixing bowl, add the chicken breasts, fresh rosemary, extra virgin olive oil, balsamic vinegar, Worcestershire sauce, pressed garlic cloves, and finely diced shallots. Mix to coat the chicken evenly.
3.Heat a skillet to medium-high heat and add 1/4 cup extra virgin olive oil. Once hot, add the chicken and cook each side for 3-4 minutes or until golden brown. Remove from the heat and set aside.
4.In the same skillet, add 12-14 diced roma tomatoes, tomato paste, fresh diced basil, kosher salt, and thyme. Cook for 6-8 minutes or until the tomato sauce begins to thicken.
5.Pour the tomato sauce into an oven-safe baking dish and add the browned chicken breasts on top. Sprinkle fresh grated Parmesan cheese and grated mozzarella cheese on top of the chicken.
6.Bake in the preheated oven for 15-20 minutes or until the cheese begins to brown.
7.While the chicken is baking, cook linguine according to package instructions until al dente. Drain the pasta and toss with 3 tablespoons of butter and additional fresh grated Parmesan cheese.
8.Serve the Chicken Parmesan Pomodoro on top of the linguine, garnishing with additional fresh basil if desired.
