Ingredients

1 lb boneless skinless chicken breast
1/3 cup almond meal or 1/3 cup flour
1/3 cup grated parmesan cheese
1 teaspoon italian seasoning
1 egg
4 ounces mozzarella cheese
1/2 cup marinara sauce ( I used Rao 's Homemade Roasted Garlic )
Chicken Parmesan is a classic Italian-American dish that's easy to make and always satisfying. This low-carb and keto-friendly version uses almond meal instead of traditional breadcrumbs and is topped with a homemade tomato sauce. Instructions

1.Preheat the oven to 375°F.
2.Cut the chicken breast in half horizontally to create two thin pieces. Season with salt and pepper on both sides.
3.In a shallow bowl or plate, mix together almond meal (or flour), grated parmesan cheese, and Italian seasoning.
4.In a separate bowl, beat the egg.
5.Dip each chicken breast piece into the egg, then coat in the almond meal mixture.
6.Heat some oil in a large skillet over medium-high heat. Once hot, add the chicken and cook each side for about 3-4 minutes or until golden brown.
7.Transfer the chicken to a greased baking dish.
8.Top each chicken breast with marinara sauce, followed by a slice of mozzarella cheese.
9.Bake for 15-20 minutes or until the cheese is melted and bubbly.
