Ingredients

1 cup basmati rice , uncooked
1 tablespoon olive oil
1/2 teaspoon cumin seed
1 onion , finely chopped
2 garlic cloves , minced
1 teaspoon minced gingerroot
1/2 lb boneless skinless chicken breasts , cut into bite-size pieces or 1/2 lb shrimp , deveined , peeled
1 1/2 cups 25 % -less-sodium chicken broth
1 teaspoon garam masala
1 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/2 teaspoon cayenne pepper
1 bay leaf
1/4 cup sundried tomato & oregano salad dressing
1 cup peas

Instructions

1.Wash the rice thoroughly until the water runs clear, then soak the rice for 30 minutes in room temperature water.

3.Add the chopped onions and garlic to the pot and cook for 2-3 minutes or until they become translucent.

6.Add the chicken broth, garam masala, ground cumin, ground turmeric, cayenne pepper, bay leaf, sundried tomato & oregano salad dressing, and peas. Stir well.
7.Drain the soaked rice and add it to the pot. Stir well and bring to a boil over high heat.
8.Cover the pot and reduce the heat to low. Cook for 15-20 minutes or until the rice is fully cooked and fluffy.
9.Turn off the heat and let the biryani rest for 5 minutes. Fluff the rice with a fork before serving.
