Ingredients

1 1/2 lbs chicken or 1 1/2 lbs lamb , cut into small pieces
3 cups rice , uncooked
1 cup yoghurt
salt
6 green chilies , minced ( or to taste )
1 teaspoon fresh garlic paste
1 teaspoon fresh ginger paste
2 teaspoons chopped mint leaves
2 teaspoons chopped coriander leaves
2 tomatoes , chopped
1 teaspoon coriander powder
1 teaspoon cumin powder
1 teaspoon chili powder
1 teaspoon ground cloves
1 teaspoon cinnamon
1 teaspoon cashews , chopped
1 cinnamon stick , broken into bits
2 whole cloves
2 whole cardamom pods
2 medium onions , sliced finely
2 tablespoons ghee ( or clarified butter )
1 pinch saffron
1 -2 teaspoon milk
1 cup French-fried onions ( to garnish )
1/4 cup chopped coriander leaves ( to garnish ) ( optional )
1/4 cup chopped mint leaf ( to garnish ) ( optional )
Chicken or Lamb Biriyani is a popular dish from the Indian subcontinent. The dish consists of fluffy rice cooked with succulent pieces of chicken or lamb, infused with a wide range of aromatic spices and herbs. Instructions

1.Rinse the rice in cold water and soak in cold water for 20 minutes.
2.Preheat the oven to 350°F.
3.Heat the ghee in a large skillet over medium heat. Add the onions and stir until golden brown. Remove half of the onions from the skillet and set aside.
4.Add the green chilies, garlic paste, ginger paste, mint leaves, coriander leaves, tomatoes, coriander powder, cumin powder, chili powder, ground cloves, and cinnamon to the skillet. Cook for 10-15 mins stirring occasionally.
5.Add the chicken or lamb pieces and cook for 10 minutes on medium heat.
6.While chicken or lamb is cooking, boil 12 cups of water in a pot.
7.Add the rice, cinnamon stick, broken cloves, whole cardamom pods, and 1 tablespoon of salt. Cook for 5 minutes or until the rice is almost cooked properly.
8.Mix the saffron and milk together in a small bowl.
9.Layer half of the rice in the bottom of a 9x13 inch baking dish. Spread out the rice, then sprinkle half of the chopped cashews and half of the remaining fried onions on top.
10.After chicken or lamb is cooked, evenly spread it over the rice in the baking dish.
11.Add the remaining rice on top of the chicken or lamb, sprinkle the remaining fried onions and chopped cashews on top, and pour the saffron milk mixture over the rice.
12.Cover and seal the baking dish with aluminum foil and bake it for 20-25 minutes in the preheated oven.
13.Serve hot with raita or cucumber salad.
