Ingredients

8 chicken thigh fillets , trimmed , halved crossways
1/2 cup teriyaki marinade , & sauce
1 tablespoon butter
1 tablespoon olive oil
2 leeks , halved , washed and sliced
4 slices bacon , rind removed , chopped
2 garlic cloves , crushed
1 1/2 cups chicken stock
1/2 cup white wine
100 g button mushrooms , sliced
100 g snow peas , to serve
chopped parsley , to serve

Instructions

1.Preheat oven to 180°C (160°C fan-forced).

6.Cover the dish with a lid or foil and bake in the preheated oven for 45-50 minutes, or until the chicken is cooked through and the sauce has thickened.
7.Serve with steamed snow peas and chopped parsley on top.
