Ingredients

750 ml chicken stock , salt reduced
10 g dried porcini mushrooms
1 tablespoon olive oil
1 brown onion , small and finely chopped
2 garlic cloves
200 g swiss brown mushrooms
200 g barley
80 ml dry white wine
100 g enoki mushrooms , trimmed
280 g chicken breasts , BBQ'ed skinless and coarsely chopped
1/3 cup chives , fresh and finely chopped
2 tablespoons parmesan cheese , finely grated
The Chicken & Mushroom Barley Risotto is a modern twist on the classic Italian dish. It is a healthier option than traditional risotto, thanks to the use of barley instead of Arborio rice. Barley has a slightly nutty flavor and a pleasantly chewy texture, making it a great alternative to white rice. Instructions

1.Soak the dried porcini mushrooms in 1/2 a cup of hot chicken stock and set aside.
2.Heat olive oil in a large saucepan over medium heat.
3.Add the onion and garlic, and cook until soft, about 3 minutes.
4.Add Swiss brown mushrooms and cook for 5 minutes, until softened.
5.Add barley and cook, stirring constantly, for 2 minutes, until it becomes lightly toasted.
6.Add the white wine to the pan and let it simmer until it has been completely absorbed by the barley.
7.Add remaining chicken stock, chicken pieces, and soaked porcini mushrooms (along with the soaking liquid).
8.Cook for 25 minutes, stirring occasionally, until the barley becomes soft and creamy.
9.If the mixture becomes too dry, add a little more stock.
10.Remove from heat and stir in the enoki mushrooms, chives, and parmesan cheese before serving.
