Ingredients

4 boneless skinless chicken breasts
1 cup milk
2 cups breadcrumbs , plain . ( I prefer to use Panko )
1 teaspoon kosher salt
1 teaspoon fresh ground black pepper
1/2 teaspoon dried oregano
1/2 cup extra virgin olive oil
2 cups cherry tomatoes
2 tablespoons extra virgin olive oil , divided
coarse salt , to taste
5 ounces arugula ( or about 6 cups )
1 tablespoon balsamic vinegar , high quality if possible
Chicken Milanese is a classic Italian dish that uses breaded chicken cutlets that are shallow-fried to create a crispy golden crust. The dish is named after the Italian city of Milan, where it is said to have originated. Instructions

1.Preheat the oven to 250°F.
2.In a shallow dish, combine the milk and chicken breasts, and soak for approximately 5 minutes.
3.In a separate shallow dish, mix together breadcrumbs, kosher salt, black pepper, and dried oregano.
4.Dip the chicken breasts in the breadcrumb mixture until fully coated.
5.Heat 1/2 cup of extra virgin olive oil in a large skillet over medium heat. Add the coated chicken breasts and cook for approximately 4-5 minutes on each side, or until golden brown and crispy.
6.In a separate baking dish, toss cherry tomatoes with 2 tablespoons of olive oil and coarse salt. Roast in the preheated oven for approximately 1 hour, or until the tomatoes are slightly shriveled.
7.In a medium bowl, toss the arugula with balsamic vinegar and remaining olive oil.
8.Serve the chicken breasts with slow-roasted cherry tomatoes and arugula salad on top.
