Instructions

1.In a large mixing bowl combine the ground chicken, minced onions, dried breadcrumbs, toasted pine nuts, basil chiffonade, lemon zest, cold water, and salt and pepper. Mix well until all ingredients are combined.
2.Scoop out tablespoons of the mixture and form them into meatballs. Dust them with some plain flour.
3.Heat a non-stick skillet over medium-high heat and drizzle with olive oil. Add the meatballs to the skillet and cook for 8-10 minutes until the meatballs are browned on all sides and are cooked through. Remove the meatballs from the skillet and set them aside.
4.In the same skillet, add the sliced button mushrooms and sauté them until tender.
5.Add the tomato sauce to the skillet with the mushrooms and bring to a simmer. Once the sauce is heated through, season with salt and pepper to your taste. Add the meatballs back to the skillet and coat them with the tomato sauce.
6.While the meatballs are cooking, cook fettuccine pasta according to package instructions until it is al dente.
