Instructions

1.Preheat oven to 400°F.
2.In a small mixing bowl, combine 1/4 cup extra virgin olive oil, 2 garlic cloves, crushed fresh ginger, and the juice of 1/2 lime.
3.Lay 2 boneless, skinless chicken breasts in a baking dish and pour marinade over chicken.
4.Bake for 30 minutes or until chicken reaches internal temperature of 165°F.
5.Remove chicken from oven, allow to cool, then dice.
6.In a medium mixing bowl, combine 1 diced mango, 1 diced roma tomato, 1/2 diced yellow bell pepper, 1/2 diced jalapeno pepper, 1/4 cup chopped fresh cilantro, 1/4 cup chopped red onion, juice of 1/2 lime, 1/2 tablespoon sugar, 1/8 teaspoon salt, and 1/8 teaspoon pepper. Stir gently.
7.To assemble wrap, lay tortilla flat and top with 1/4 cup prepared brown rice, 1/4 cup prepared black beans, 1/2 cup chopped cabbage, diced chicken, 1/4 cup prepared mango salsa, and a dollop of sour cream.
8.Roll the wrap, tucking in the sides to hold ingredients inside the wrap. Cut in half and serve.
