Ingredients

1 baby chicken , with skin on , cut up
1 1/4 teaspoons mandy mixed spice ( recipe to be posted )
sea salt , to taste
1 cup basmati rice , rinsed and soaked
1 tablespoon butter , divided
3 tablespoons butter , divided
1 onion , finely chopped
1 small tomatoes , diced ( may use canned )
3 cardamom pods , bruised
2 whole cloves ( not garlic )
sea salt & freshly ground black pepper , to taste
2 cups chicken stock ( I use homemade to be gluten free and halal )
shell of half onion , not actual shell the white part ( or two halves to make a bowl shape that wo n't leak )

Instructions

1.Season the chicken pieces with mandy mixed spice and salt.
2.Preheat the oven to 350°F/180°C.
3.Melt 1 tablespoon of butter in a saucepan and lightly fry the rice for 2-3 minutes.
4.Add 2 cups of chicken stock and bring it to a boil. Then reduce the heat and let the rice cook for 5 minutes.
5.In a separate pan, melt 3 tablespoons of butter and sauté the onions until they become transparent.
6.Add the diced tomato, cardamom pods, cloves, salt, pepper, and cook for a minute or two.
7.When done, set this aside.
8.In a baking dish, spread the rice at the bottom. Place the chicken on the rice, and put the onion-tomato mix on top of the chicken. Finally, add the shell of half an onion to the top of the onion-tomato mix.
9.Cover the bowl tightly with foil and place it in the preheated oven for 2 to 2 1/2 hours.
10.Take out the bowl carefully, and serve the Chicken Mandy on a large platter. Use the onion shell as a bowl to hold the sauce left in the baking dish by removing the onion shell, and pour it over the chicken and rice.
